Casares

The Mencía, Alicante Bouschet and Palomino grapes ferment with indigenous yeasts in open tanks of 1,000 liters, without temperature control, respecting the character of the vineyard. The wine then ages for twelve months in 500-liter French oak barrels and in a 1,000-liter oval foudre, refining it to show a deep, complex profile full of Bierzo identity.

Located among the highest vineyards of Valtuille de Abajo, Casares rises to 680 meters, where Mencía, Alicante Bouschet and Palomino grow in goblet on clay soils rich in iron and with the presence of pebbles.

Facing west and with vines about 75 years old, this site offers wines with floral, elegant and deep profiles, marked by the altitude, the light and the uniqueness of its terroir. Casares is a vineyard that breathes harmony and keeps an unmistakable Bierzo character.
